  • 1 large sweet onion, finely chopped
  • 3 cups low-sodium beef broth
  • 1 (6-ounce) can tomato paste
  • 2 (10-ounce) cans diced tomatoes and green chilies
  • 1 (15.5-ounce) can dark red kidney beans, drained and rinsed
  • 1 (15.5-ounce) can pinto beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cayenne

Instructions

  1. In a large skillet over medium heat, brown the ground meat until cooked through. Add chopped onion halfway through cooking and stir in minced garlic until fragrant.
  2. Drain excess grease and transfer meat mixture to the slow cooker.
  3. In a separate bowl, whisk together beef broth and tomato paste; pour over the meat in the slow cooker.
  4. Add diced tomatoes, kidney beans, pinto beans, and spices; stir well to combine.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until flavors meld.
