  • 1 1/2 lbs chicken breasts (diced)
  • 1 lbs turkey sausage links (sliced)
  • 1/2 onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 2 stalks celery (sliced)
  • 2 tsp minced garlic
  • 1 Tbsp cajun seasoning
  • 2 tsp dried oregano
  • 1 cup chicken broth
  • 1 can crushed tomatoes (14.5 oz)
  • 3 cups cooked rice

Instructions

  1. Prepare all ingredients by dicing the vegetables and slicing the turkey sausage.
  2. In the slow cooker, combine diced chicken, sliced turkey sausage, onion, bell peppers, celery, minced garlic, crushed tomatoes, cajun seasoning, oregano, and chicken broth.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked.
  4. Stir in the cooked rice just before serving.
