  • 3 tablespoons all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 5 cloves garlic (minced)
  • 2-inch piece of ginger (minced)
  • 1 cup reduced-sodium chicken broth
  • ½ cup reduced-sodium soy sauce
  • ¼ cup hoisin sauce
  • ½ cup rice vinegar
  • 3 tablespoons vegetable oil
  • 3 stalks green onions (thinly sliced (green and light green parts))
  • 1 ½ teaspoon crushed red pepper flakes
  • 1 stalk lemongrass (cut into thirds and pounded)
  • ½ cup light brown sugar (packed)
  • 2 tablespoons Sriracha sauce

Instructions

  1. In a small bowl, mix flour, salt, and pepper. Dredge beef cubes in the mixture and set aside.
  2. Heat oil in a skillet over medium heat. Brown the beef in batches until seared, then transfer to the slow cooker.
  3. Sauté garlic, ginger, green onions, lemongrass, and red pepper flakes in the same skillet until fragrant. Add chicken broth to deglaze the pan and pour into the slow cooker.
  4. In a separate bowl, whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, and Sriracha; then pour over the beef in the slow cooker.
  5. Cover and cook on high for 4–5 hours or low for 6–8 hours. Stir in reserved green onions before serving.
