  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Add beef cubes in batches and sear until browned on all sides. Remove from pot.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5-7 minutes).
  4. Return the beef to the pot along with diced tomatoes, beef broth, tomato paste, and dried herbs. Mix well.
  5. Cover the pot and bake in the preheated oven for 2.5 to 3 hours until the beef is tender.
  6. Let it rest for a few minutes before serving.
