  • 1/4 cup fresh lemon juice

  • 3 roma tomatoes (diced)
  • 1 medium avocado (diced)
  • 1 jalapeno (seeds removed and minced)
  • 1/2 cup fresh cilantro (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Boil the shrimp in a medium pot of water for 1-2 minutes until opaque. Transfer to an ice bath to cool, then drain.
  2. In a glass bowl, combine cooled shrimp with lime juice and lemon juice; refrigerate for at least 15 minutes.
