  • 200 g firm tofu, pressed and shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans (cooked or canned, drained)
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • ¼ cup chopped red onion
  • ¼ cup chopped cilantro
  • Sour cream and guacamole, for serving
  • Lime wedges, for garnish

Instructions

  1. Sauté the shredded tofu in olive oil with chipotle chili powder, smoked paprika, cumin, salt, and pepper over medium heat for about 5–7 minutes until browned.
  2. Preheat your oven to 375°F (190°C).
  3. Spread tortilla chips evenly on a baking sheet and layer with the sautéed tofu and shredded cheese. Top with black beans, corn, tomatoes, jalapeños, and red onion.
  4. Bake for 10–12 minutes until the cheese is melted.
  5. Remove from the oven and sprinkle fresh cilantro on top before serving warm with sour cream and guacamole.
