  • 5 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 1 Tbsp cornstarch
  • 2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 cup minced fresh cilantro

Instructions

  1. Preheat the oven to 400°F and line baking sheets with parchment paper.
  2. Wash and dry the potatoes, then cut each into eight wedges.
  3. In a large mixing bowl, combine potato wedges with vegetable oil and minced garlic; stir well.
  4. Add grated Parmesan cheese, cornstarch, black pepper, kosher salt, onion powder, paprika, chili powder, and cilantro. Mix until evenly coated.
  5. Spread wedges on prepared baking sheets in a single layer.
  6. Bake for 15 minutes at 400°F; then reduce temperature to 375°F and continue baking for an additional 40 minutes or until golden brown and crispy.
