  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • Fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large skillet over medium heat, combine olive oil and butter. Add the diced onion; cook until soft (about 5 minutes).
  3. Stir in minced garlic and sliced mushrooms; sauté until browned (about 8 minutes). Season with thyme, salt, pepper, and optional apple vinegar; cook until liquid is absorbed.
  4. Remove from heat; stir in cream cheese, Parmesan cheese, and Dijon mustard until creamy. Let cool slightly before mixing in one beaten egg.
  5. Unroll thawed puff pastry; cut diagonal strips along each long side while leaving the center intact for filling.
  6. Spread the mushroom-cheese mixture down the center of the pastry. Fold in ends and braid strips over the filling.
  7. Transfer to lined baking tray; brush with remaining beaten egg for a golden finish.
  8. Bake for 20–22 minutes until golden brown.
