  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Season the roast with salt and pepper.
  3. Sear the roast on all sides until browned (4-5 minutes per side) and then set aside.
  4. In the same pot, add sliced onions and cook until caramelized (15-20 minutes). Add minced garlic and stir for 1 minute.
  5. Pour in beef broth and balsamic vinegar, scraping up any browned bits.
