  • 3/4 cup boiling water
  • 1 cup granulated sugar (for frosting)
  • 5 tbsp unsalted butter
  • 1/2 cup heavy cream (warmed for frosting)
  • 3/4 tsp salt (for frosting)
  • 1 1/2 tsp vanilla
  • 200g dark chocolate (70% cocoa)
  • 8 oz cream cheese (for cream cheese mixture)
  • 1/3 cup cocoa powder (for cream cheese mixture)
  • 1 cup powdered sugar (for cream cheese mixture)
  • 1/2 cup salted caramel sauce (for cream cheese mixture)
  • 1 cup heavy cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them and lining with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, granulated sugar, light brown sugar, and salt.
  3. In another bowl, mix the wet ingredients: eggs, vegetable oil, buttermilk, sour cream until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined.
  5. In a separate bowl, mix cocoa powder with boiling water until dissolved and then incorporate into your batter.
  6. Divide the batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool before frosting with chocolate caramel fudge frosting.
