  • 22 ½ pounds beef flank steak
  • ¼ cup vegetable oil
  • 1 large onion
  • 45 cloves garlic
  • 2 bell peppers
  • 2 tomatoes
  • 1 can tomato sauce
  • 1 teaspoon smoked paprika
  • 12 cups beef broth
  • Salt, pepper, cumin, and Sazon (adjust to taste)
  • 1 large bay leaf
  • 1 thyme sprig

Instructions

  1. Trim excess fat from the flank steak and season it with salt, pepper, cumin, and Sazon.
  2. In a skillet, heat vegetable oil over medium heat and sear the beef until browned on both sides.
  3. In the same skillet, add sliced onions, garlic, bell peppers, tomatoes, tomato sauce, thyme sprig, smoked paprika, and broth; cook until fragrant.
  4. Transfer about three-quarters of the sauce mixture to a slow cooker and layer the seared beef on top. Cover and cook on high for 3 ½ to 4 hours or low for 7-8 hours until tender.
  5. Remove beef from the slow cooker and shred it; mix it back into the sauce before serving.
