  • 2 tablespoons olive oil (divided)
  • 7 oz (200 g) block of feta cheese
  • 1 head of garlic (top sliced off)
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup fresh basil, chopped
  • 1 lemon (quartered)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer onto a baking sheet.
  4. Place the block of feta in the center and surround it with the head of garlic and lemon quarters.
  5. Roast in the oven for about 50 minutes, stirring halfway through for even cooking.
