  • 2 fresh Red Snapper fillets
  • 2 tablespoons olive oil
  • ½ cup heavy cream
  • ⅓ cup chicken broth
  • 1 tablespoon tomato paste
  • ¼ cup bell peppers, chopped
  • ¼ cup onions, diced
  • Salt and pepper to taste
  • Creole seasoning blend

Instructions

  1. Rinse the red snapper fillets under cold water and pat dry. Season both sides with salt, pepper, Creole seasoning, and smoked paprika.
  2. Heat olive oil in a sauté pan over medium-high heat. Sear the seasoned fish for about 3 minutes on each side until golden brown.
  3. Transfer the fish to a baking dish and bake in a preheated oven at 350°F for about 15 minutes or until reaching an internal temperature of 130°F.
  4. In the same sauté pan, melt butter and sauté onions, bell peppers, and tomatoes until softened (about 5 minutes). Stir in tomato paste and heavy cream; adjust consistency with chicken broth as needed. Simmer on low heat for 5 minutes.
  5. Serve the baked fish with the creamy sauce poured over it; garnish with chopped parsley.
