  • 1 sheet of puff pastry
  • Fresh or frozen raspberries
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter

Instructions

  1. Preheat your oven to 190 degrees Celsius.
  2. In a saucepan, mix milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat over medium heat while stirring until thickened.
  3. Remove from heat, stir in butter until melted, and allow to cool.
  4. Roll out the puff pastry and cut into eight equal rectangles.
  5. Place cooled custard in the center of each rectangle and top with raspberries.
  6. Fold over each rectangle and seal corners securely.
  7. Brush tops with an egg wash (whisked egg yolk mixed with milk).
  8. Bake on a parchment-lined baking sheet for about 15-20 minutes or until golden brown.
  9. Let cool briefly before serving.
