  • 1 Lebanese cucumber (diced into 1/2-inch pieces)
  • 1/4 red onion (thinly sliced)
  • 2 garlic cloves (minced)
  • 1 tbsp fresh parsley
  • 1 cup Greek yogurt (full-fat for creamier sauce)
  • 1 tbsp fresh dill
  • 1 tbsp lemon juice (fresh squeezed)
  • 1 tsp dried oregano
  • 1 tbsp honey
  • 1/2 tsp black pepper (freshly ground)
  • 2/3 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • black pepper to taste

Instructions

  1. Rinse rice under cold water until clear. Combine rice and water in a medium saucepan; bring to boil.
  2. Lower heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
  3. Preheat oven to 400°F (200°C). Mix oregano, honey, black pepper, salt, paprika, garlic powder, and lemon juice; rub over salmon.
  4. Place salmon on a parchment-lined baking sheet; bake for 12-15 minutes until flaky.
  5. Toss diced vegetables with remaining lemon juice, salt, and pepper in a mixing bowl.
  6. Assemble bowls: rice base topped with salmon and mixed vegetables. Drizzle yogurt sauce over top.
