  • 1 lb rotini noodles
  • 4 oz turkey pepperoni (quarter pieces)
  • 4 oz turkey slices (quartered)
  • 1 pint cherry tomatoes (halved)
  • 1 cup black olives (halved)
  • 1 orange bell pepper (diced)
  • 1 green bell pepper (diced)
  • 8 oz mozzarella pearls
  • 3/4 cup native olive oil
  • 1/4 cup red apple vinegar
  • 2 tablespoons organic lemon juice
  • 1/4 cup finely freshly grated Parmesan
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 teaspoon salt
  • 1/2 tsp oregano
  • 1/2 tsp paprika powder
  • 1/2 tsp pepper
  • 1/2 teaspoon sugar

Instructions

  1. Cook rotini noodles in boiling water until al dente. Drain and cool.
  2. Chop bell peppers, halve tomatoes and olives, and finely dice onion.
  3. Whisk together olive oil, vinegar, lemon juice, Parmesan cheese, and herbs in a bowl.
  4. Combine cooled pasta with turkey pepperoni, turkey slices, vegetables, and mozzarella in a large mixing bowl.
  5. Pour dressing over salad and toss gently until well coated. Garnish with additional cheese and parsley.
