  • 4 boneless, skinless chicken breasts
  • 18 corn tortillas
  • 1 (28 oz) can green chile enchilada sauce
  • 1 (16 oz) package shredded Monterey Jack cheese
  • 1 (8 oz) container reduced-fat sour cream
  • Garlic salt (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a medium-sized baking dish.
  2. Season chicken breasts with garlic salt and bake in the prepared dish for about 45 minutes until fully cooked (internal temperature should be 165°F/74°C).
  3. Shred the cooked chicken into bite-sized pieces.
  4. Optionally, char tortilla halves over an open flame using metal tongs until puffed.
  5. Pour half an inch of enchilada sauce into the bottom of the baking dish, then layer six tortilla halves on top.
  6. Add half of the shredded chicken, sprinkle with one-third of the cheese, add half of the sour cream, then drizzle with one-third of the remaining enchilada sauce.
  7. Repeat layers with remaining ingredients until all are used.
  8. Cover and bake for an additional 45 minutes.
  9. Allow to cool slightly before serving.
