  • 6 tbsp unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup all purpose flour, spooned and leveled
  • 2 1/4 tsp pumpkin pie spice
  • pinch of salt
  • 46 Biscoff Cookies
  • 10 tbsp unsalted butter, melted
  • 2 tbsp granulated white sugar
  • 32 oz cream cheese, softened
  • 1 1/4 cups granulated white sugar
  • 1/4 cup cornstarch
  • 1 cup canned pumpkin puree
  • 1/3 cup sour cream, at room temperature
  • 1 tbsp pumpkin pie spice
  • 3 whole eggs, at room temperature
  • 2 egg yolks, at room temperature
  • 3/4 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare the crust by mixing melted butter, crushed Biscoff cookies, and sugar; press into a greased springform pan and bake for 10 minutes.
  2. In a large bowl, beat softened cream cheese and sugar until smooth. Gradually add cornstarch, pumpkin puree, sour cream, pumpkin pie spice, and vanilla extract. Mix in eggs one at a time until just combined.
  3. Assemble by pouring half of the filling onto the cooled crust, topping with half of the streusel. Add the remaining filling and top with remaining streusel.
  4. Bake for about 150 minutes until set but slightly jiggly in the center. Turn off the oven and let it cool inside for an hour.
  5. Chill in the refrigerator for at least four hours or overnight before serving with whipped cream.
