  • 1 ½ cups powdered sugar
  • 3 large egg whites
  • ¼ cup granulated sugar
  • ½ teaspoon cream of tartar
  • ½ teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ¼ cup (50g) unsalted butter, softened
  • 3 tablespoons pumpkin purée

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar, then stir in pumpkin pie spice.
  3. Whip egg whites with cream of tartar until foamy; gradually add granulated sugar until stiff peaks form. Fold in dry ingredients gently.
  4. Pipe circles onto prepared sheets, tap to release air, and let rest for 30–45 minutes.
  5. Bake for 15–18 minutes until set; cool before removing from sheets.
  6. For the buttercream, beat softened butter, gradually add powdered sugar, then mix in pumpkin purée, vanilla, pumpkin pie spice, and salt until fluffy.
  7. Assemble by piping buttercream between two macaron shells.
