  • 1/2 cup butter (room temperature) for the whipped pumpkin butter
  • 1/3 cup pumpkin puree for the whipped pumpkin butter
  • 3 tbsp maple syrup (or honey) for the whipped pumpkin butter
  • 1 tsp vanilla extract for the whipped pumpkin butter
  • 1/2 tsp cinnamon for the whipped pumpkin butter
  • 1/2 tsp pumpkin pie spice for the whipped pumpkin butter

Instructions

  1. Heat a non-stick skillet over medium heat with a small amount of butter.
  2. In a rectangular baking dish, whisk together the eggs, milk, pumpkin puree, vanilla extract, ground cinnamon, and pumpkin pie spice until well combined.
  3. Dip each slice of bread into the batter, ensuring both sides are fully coated. Cook in the skillet for about 2-3 minutes per side until golden brown.
  4. For the whipped pumpkin butter, beat softened butter with pumpkin puree, maple syrup (or honey), vanilla extract, cinnamon, and pumpkin pie spice until fluffy.
