  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 tablespoon cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon vanilla extract
  • 3 tablespoons milk (more to taste)
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch cake pan.
  2. Prepare the streusel by mixing the flour, sugars, salt, cinnamon, pumpkin pie spice, and melted butter until crumbly.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, salt, and spices; mix in chilled butter until crumbly.
  4. Blend half the pumpkin puree into the dry mix using an electric mixer.
  5. In a separate bowl, whisk remaining pumpkin puree with eggs, oil, and vanilla; combine with the dry ingredients gradually.
  6. Layer half of the batter in the pan followed by half the streusel; repeat layers finishing with streusel on top.
  7. Bake for about 35-50 minutes until set; cool before icing.
