  • 1 cup sugar

  • 1 cup canned pumpkin puree

  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 8 oz cream cheese, softened
  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a greased 9×13 inch baking pan.
  2. In a large mixing bowl, combine vegetable oil and sugar until well mixed. Beat in eggs one at a time, then stir in pumpkin puree and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually add dry ingredients to the wet mixture until just combined.
  4. In a separate bowl, beat cream cheese with sugar and vanilla until smooth.
  5. For the streusel topping, mix together light brown sugar, white sugar, softened butter, flour, cinnamon, ginger, cloves, nutmeg, and baking powder until crumbly.
  6. To assemble: pour half of the pumpkin batter into the prepared pan. Spread the cream cheese layer evenly over it. Pour the remaining pumpkin batter on top and sprinkle with streusel.
  7. Bake for about 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.
