  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 1 green bell pepper, minced
  • ¼ cup fresh cilantro, chopped
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs, beaten
  • Coconut oil for frying

Instructions

  1. Preheat the oven to 356°F (180°C).
  2. Grease a casserole dish.
  3. In a mixing bowl, season the ground beef with adobo and sazon; set aside.
  4. Heat coconut oil in a skillet; sauté onion, garlic, and bell pepper until soft. Add cilantro.
  5. Brown the seasoned ground beef in the skillet; then add tomato sauce and olives/capers. Simmer for 5-10 minutes.
  6. Peel and cut plantains into strips; fry until golden brown in coconut oil.
  7. Layer half the fried plantains in the greased dish; brush with beaten eggs.
  8. Add half the meat mixture and sprinkle with dairy-free cheese.
  9. Repeat layers until all ingredients are used, finishing with plantains and cheese on top.
  10. Bake for about 20 minutes until golden brown.
