  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped pistachios

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, cream together softened butter and granulated sugar until fluffy. Add egg and vanilla; mix until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mix to the butter mixture until just combined.
  4. Press the dough evenly into the prepared pan and bake for 12–15 minutes until edges are lightly golden. Allow it to cool completely in the pan.
  5. In a separate bowl, whisk instant pistachio pudding mix with milk and heavy cream until thickened (about 5–10 minutes).
  6. Once cooled, spread the pistachio pudding over the cookie base and sprinkle with chopped pistachios.
  7. Refrigerate for at least 2 hours before slicing into squares to serve.
