  • ½ cup low sodium soy sauce
  • ½ cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 4 cups broccoli florets
  • 1 red bell pepper, chopped
  • 20 ounces canned pineapple chunks
  • Salt and pepper (to taste)
  • 2 ½ tablespoons avocado oil or olive oil (divided)
  • 1 small red onion (chopped into 1-inch pieces)
  • Chopped green onions (optional)
  • Cooked rice (optional)

Instructions

  1. Prepare the teriyaki sauce by whisking together soy sauce, pineapple juice, brown sugar, rice vinegar, minced ginger, and garlic in a medium bowl.
  2. Heat oil in a large skillet over medium-high heat; add chicken pieces seasoned with salt and pepper. Cook until browned and cooked through (7-10 minutes). Remove from skillet.
  3. In the same skillet, add more oil and sauté chopped onion, bell pepper, and broccoli for about 4 minutes until nearly tender.
  4. Return chicken to the skillet along with pineapple chunks. Pour in the teriyaki sauce and cook for an additional 1-2 minutes until thickened.
  5. Serve warm over rice or as desired.
