  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • 1 cup fresh pineapple (cubed)
  • 8 small tortillas (flour or corn)
  • sliced jalapeño (optional)
  • sliced avocado (optional)
  • diced red onion
  • chopped cilantro

Instructions

  1. In a mixing bowl, combine chili powder, cumin, paprika, and lime juice. Add chicken thighs and coat well. Marinate for at least 15 minutes.
  2. Heat a skillet or grill pan over medium-high heat. Cook marinated chicken for 6–7 minutes on each side until cooked through.
  3. While chicken cooks, chop fresh pineapple into cubes.
  4. Warm tortillas in another skillet for about 30 seconds on each side until pliable.
  5. Slice cooked chicken into strips and assemble tacos by layering chicken and pineapple onto each tortilla. Add desired toppings.
  6. Serve immediately with lime wedges on the side.
