  • 3/4 cup pineapple juice (from the canned pineapple)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 1 tablespoon cornstarch
  • 1/2 red bell pepper (cut into bite-size pieces)
  • 1/2 medium onion (sliced or cut into bite-size pieces)

Instructions

  1. In a bowl, mix reserved pineapple juice, honey, soy sauce, rice vinegar, ginger, garlic, and cornstarch. Whisk until smooth.
  2. Cut chicken into bite-sized pieces; season with garlic powder and pepper. Coat with cornstarch.
  3. Heat olive oil in a skillet over medium-high heat; cook chicken until browned and cooked through.
  4. Add drained pineapple to the skillet; caramelize for one minute.
