  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature
  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 Tbsp cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream before pouring over the crust.
  4. In another bowl, mix sliced peaches with flour, sugar, cinnamon, and nutmeg. Sprinkle this mixture evenly over the cheesecake filling.
  5. Dot the top with small pieces of cold butter and bake for 45–50 minutes until set and golden brown on top. Let cool completely before cutting into bars.
