  • 1 1/4 cups almond milk
  • 5 eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 2 tsp light butter (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 13×9 casserole dish with cooking spray.
  2. Spread the bread chunks evenly in the prepared dish.
  3. In a mixing bowl, whisk together eggs and sugar until well combined. Add almond milk, vanilla extract, ground cinnamon, and kosher salt; mix until smooth.
  4. Pour the egg mixture over the bread, pressing gently to ensure each piece is soaked. Cover and refrigerate for at least a few hours or overnight.
  5. When ready to bake, layer the thawed peaches evenly over the soaked bread.
  6. In another bowl, combine flour, brown sugar, light butter, and ground cinnamon for the streusel topping; mix until crumbly and sprinkle over peaches.
