  • unbaked pie crust
  • 10 ounces peanut butter chips
  • 1 (14-ounce) can sweetened condensed milk
  • 3 tablespoons salted butter
  • 2 cups miniature vegan marshmallows
  • 1 ½ cups dry roasted unsalted peanuts
  • ½ cup granulated sugar for caramel topping
  • 3 tablespoons salted butter (cubed) for caramel topping
  • ¼ cup heavy cream for caramel topping
  • 1 teaspoon vanilla extract for caramel topping
  • ½ teaspoon kosher salt for caramel topping

Instructions

  1. Preheat your oven to 400°F. Roll out your unbaked pie crust and transfer it into a pie plate. Crimp the edges and prick the bottom with a fork.
  2. Line the crust with parchment paper and fill it with pie weights. Bake for 15 minutes, then remove weights and bake for an additional 15 minutes until golden brown. Set aside.
  3. In a saucepan over medium heat, melt together peanut butter chips, sweetened condensed milk, and salted butter until smooth.
  4. Stir in vegan marshmallows until fully melted and combined.
  5. Pour the filling into the baked crust and sprinkle dry roasted peanuts on top.
  6. For the caramel topping, melt sugar in a small saucepan until amber-colored; then add cubed butter followed by heavy cream, stirring until combined.
  7. Add vanilla extract and salt to the cooled caramel sauce before drizzling it over the peanuts on top of the pie.
  8. Refrigerate for at least four hours before slicing.
