  • 1 medium cucumber, chopped
  • 1 pint grape tomatoes, halved
  • 1 small bell pepper, chopped
  • 1/4 cup finely diced red onion
  • 1 cup Italian dressing
  • 2/3 cup crumbled feta cheese
  • 1/4 cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Boil water in a large pot, add salt and pasta. Cook until al dente according to package instructions. Drain and rinse under cold water.
  2. While the pasta cools, chop the cucumber, halve the tomatoes, chop the bell pepper, and dice the onion.
  3. In a large bowl, combine cooled pasta with vegetables. Add Italian dressing, feta cheese, olives, and parsley. Season with salt and pepper.
