  • 1 cup unsalted butter (melted and cooled)
  • 1 cup brown sugar (packed light or dark)
  • 1/2 cup white granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/2 cups Oreo pieces (12 Oreos)
  • 1/2 cup Oreo crumbs (5 Oreos)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine cream cheese, white sugar, and vanilla extract; beat until smooth and set aside.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, blend melted butter with brown sugar, white sugar, and vanilla extract using an electric mixer until well combined. Add eggs one at a time, mixing well after each addition.
  4. Gradually mix in dry ingredients until just combined; fold in Oreo pieces.
  5. For each cookie, scoop out dough and place about one tablespoon of cheesecake filling in the center; enclose with more dough.
  6. Bake for 12-14 minutes or until edges are lightly golden; cool on baking sheets before transferring to wire racks.
