- 2 pounds boneless, skinless chicken thighs
- ¼ cup water
- ½ teaspoon Kosher salt
- ½ teaspoon baking soda
- 2 large eggs
- ½ cup cornstarch
- 1 tablespoon oil (neutral)
- 1 cup orange juice
- 1 tablespoon orange zest
- ¼ cup ketchup
- 2 tablespoons granulated sugar
- 1½ tablespoons white vinegar
- 1 tablespoon cornstarch
- ½ tablespoon garlic (minced)
- ½ teaspoon Chinese chili pepper flakes
- 1 stalk green onion (thinly sliced)
- In a large mixing bowl, combine chicken thighs, water, baking soda, and salt. Mix until water is absorbed.
- Add eggs and cornstarch, mixing until well combined. Incorporate oil.
- Heat oil in a wok or tall pan to 375°F.
- Combine orange juice, orange zest, ketchup, sugar, vinegar, and cornstarch in a bowl. Mix well.
- Fry marinated chicken pieces in hot oil until lightly golden, about 4-5 minutes. Drain for 2-3 minutes.
- Return chicken to oil for a second fry until golden brown and crispy, about 5-6 minutes. Drain on paper towels.
- In a wok, heat oil and stir-fry white parts of green onion, garlic, and chili peppers until fragrant.
- Pour in the sauce, cooking until bubbly and thickened.
- Add fried chicken to the sauce, stirring until coated.
- Serve immediately with rice or noodles, garnished with green onions.
