  • 1 whole seedless navel orange
  • 4 eggs
  • 3/4 cup olive oil
  • 1 1/4 cup granulated sugar
  • 1/4 cup sour cream
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup confectioners' sugar
  • 12 tablespoons orange juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 loaf pan.
  2. In a blender, combine quartered navel orange (seeds removed), eggs, olive oil, granulated sugar, sour cream, and vanilla extract. Blend until smooth.
  3. Add all-purpose flour, baking powder, and sea salt to the blender. Pulse just until combined.
  4. Pour the batter into the prepared loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
  5. Cool in the pan for 10 minutes before transferring to a wire rack.
  6. If desired, mix confectioners' sugar with orange juice in a bowl until smooth. Drizzle over your cooled cake before serving.
