  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 egg
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • Salt & pepper, to taste
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons Cajun seasoning
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan
  • Fresh parsley, for garnish

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan, egg, Cajun seasoning, garlic powder, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a large pot over medium heat; brown meatballs on all sides and set aside.
  3. Sauté diced onion and sliced bell pepper in the same pot until softened. Add minced garlic and Cajun seasoning.
  4. Pour in diced tomatoes and chicken broth; bring to a boil. Add penne pasta; simmer until al dente.
  5. Return meatballs to the pot; cover and cook until meatballs are cooked through. Stir in heavy cream and adjust seasoning.
