1 can (14.75 ounces) pink salmon, drained and flaked
1/2 cup breadcrumbs
1/4 cup onion, finely diced
2 tablespoons fresh parsley, chopped
2 large eggs, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil or butter (for frying)
Instructions
In a large mixing bowl, combine flaked salmon, breadcrumbs, diced onion, chopped parsley, beaten eggs, garlic powder, salt, and pepper. Mix until just combined.
Shape the mixture into 6 to 8 equal-sized patties using your hands.
Heat olive oil or butter in a skillet over medium heat until hot but not smoking.
Add patties to the skillet in a single layer; cook for about 3 to 4 minutes on one side until golden brown. Carefully flip each patty and cook for an additional 3 to 4 minutes on the other side.
Remove cooked patties from the skillet and drain on paper towels.
