  • 1/2 cup breadcrumbs

  • 2 tablespoons fresh parsley, chopped
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or butter (for frying)

Instructions

  1. In a large mixing bowl, combine flaked salmon, breadcrumbs, diced onion, chopped parsley, beaten eggs, garlic powder, salt, and pepper. Mix until just combined.
  2. Shape the mixture into 6 to 8 equal-sized patties using your hands.
  3. Heat olive oil or butter in a skillet over medium heat until hot but not smoking.
  4. Add patties to the skillet in a single layer; cook for about 3 to 4 minutes on one side until golden brown. Carefully flip each patty and cook for an additional 3 to 4 minutes on the other side.
  5. Remove cooked patties from the skillet and drain on paper towels.
