  • 1 cup panko bread crumbs
  • 1 cup milk
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
  2. In a small bowl, soak panko bread crumbs in milk until absorbed.
  3. Melt butter in a sauté pan; cook onions until fragrant, then add garlic briefly before removing from heat.
  4. In a large bowl, combine soaked panko, ground beef, egg, Worcestershire sauce, thyme, salt, and cooked onions and garlic. Mix gently.
  5. Shape into a loaf on the prepared baking sheet and score the top with a knife.
  6. Bake uncovered for 40 minutes; mix ketchup, brown sugar, and mustard while it bakes.
  7. After the initial bake, spread the sauce on top and bake for an additional 30–35 minutes until internal temperature reaches 160°F (70°C).
