  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee or hot water
  • 1 cup unsalted butter (room temperature)
  • 2/3 cup Nutella (for buttercream)
  • 3 cups powdered sugar
  • 1/4 cup cocoa powder
  • 3 tbsp heavy cream
  • 1 tsp vanilla extract
  • 3/4 cup Nutella (for garnish)
  • 14 hazelnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together egg, milk, vegetable oil, vanilla extract, and hot water until well mixed.
  4. Gradually combine wet ingredients into dry ingredients until just combined; avoid overmixing.
  5. Fill cupcake liners about two-thirds full with batter and bake for 18 minutes or until a toothpick comes out clean.
  6. Meanwhile, prepare the Nutella buttercream by beating together room-temperature unsalted butter, Nutella, powdered sugar, cocoa powder, heavy cream, and vanilla extract until fluffy.
  7. Once cupcakes have cooled completely, frost generously with the Nutella buttercream and garnish with hazelnuts.
