  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 3 ripe kiwis (peeled and sliced)
  • 1 cup kiwi puree (about 4 kiwis)
  • 2 tablespoons additional sugar for kiwi puree

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture firmly into a 9-inch springform pan and refrigerate.
  2. For the filling, beat softened cream cheese until smooth, then add powdered sugar and vanilla extract. In another bowl, whip heavy cream until stiff peaks form and fold it into the cream cheese mixture.
  3. Gently fold in sliced kiwis before pouring the filling over the chilled crust. Smooth the top and refrigerate for at least 4 hours.
  4. To make the topping, blend ripe kiwis with sugar until smooth to create kiwi puree. Once the cheesecake is set, spread the kiwi puree on top and garnish with extra kiwi slices if desired.
