1 small onion, chopped
16 ounces cremini mushrooms, sliced
3 cloves garlic, minced
½ cup raw walnut halves
1 ¼ cups cooked pearled barley
1 cup cooked pinto or black beans, rinsed and drained
1 tablespoon nutritional yeast
2 tablespoons vegan Worcestershire sauce
½ cup panko breadcrumbs
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon fine sea salt

Instructions
In a large sauté pan over medium-low heat, cook chopped onion and sliced mushrooms until liquid evaporates (about 15 minutes). Add minced garlic, thyme, and smoked paprika; cook for an additional 2-3 minutes.
Preheat oven to 400°F and line a baking sheet with parchment paper.
In a food processor, pulse walnuts until coarsely crumbled. Add the sautéed mixture along with barley, beans, nutritional yeast, Worcestershire sauce, panko breadcrumbs, salt, and pepper; pulse until combined but chunky.
Shape the mixture into round patties (yielding about eight) and place them on the baking sheet.
Bake for 30-35 minutes, flipping halfway through until golden brown.
