  • 2 tbsp olive oil (divided)
  • 6 cloves garlic, minced
  • 1 yellow onion, sliced thinly
  • 46 pieces chicken thighs, skin on & bone in
  • 1 tbsp parsley, minced
  • 1 tbsp cilantro, minced
  • 56 strands saffron (optional) (bloomed with an ice cube for 15 minutes)
  • 1 tsp salt
  • 2 tsp pepper
  • 2 tsp ginger
  • 2 tsp paprika
  • 1 tsp cumin
  • ½ tsp turmeric
  • 1 piece preserved lemon, sliced thinly
  • 1 cup green olives
  • 2 tbsp water

Instructions

  1. Gather all ingredients: mince garlic, slice onion and preserved lemon thinly, and bloom saffron in water if using.
  2. In a heavy-bottomed pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Sauté sliced onion until translucent.
  3. Add another tablespoon of olive oil and place chicken thighs skin-side down in the pot. Brown on both sides for 5-7 minutes until golden.
  4. Stir in garlic, ginger, paprika, cumin, turmeric, salt, pepper, parsley, cilantro, saffron (if using), and sliced preserved lemon; mix well to coat the chicken.
  5. Add green olives and water; bring to a gentle simmer. Cover and reduce heat to low; cook for about 60 minutes until the chicken is tender.
  6. Serve hot with couscous or Moroccan bread on the side.
