Ingredients

Scale
  • 2½ cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1¾ cups granulated sugar
  • ½ cup vegetable or canola oil
  • 2 large eggs
  • 2 large egg whites
  • 2½ teaspoons pure vanilla extract
  • ½ teaspoon almond extract (optional)
  • ⅔ cup sour cream
  • ¾ cup milk (preferably whole or 2%)
  • 3 cups fresh strawberries (sliced or diced, divided)
  • 2 tablespoons strawberry jam
  • 8 ounces cream cheese (softened to cool room temperature)
  • 1 cup powdered sugar
  • ¾ teaspoon vanilla extract
  • 2¼ cups heavy whipping cream (very cold)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, beat sugar and oil until smooth. Add eggs one at a time, followed by vanilla extract and almond extract if using.
  4. Gradually mix dry ingredients into wet ingredients, alternating with sour cream and milk until just combined.
  5. In a separate bowl, combine sliced strawberries with strawberry jam; let them macerate for about 10-15 minutes.
  6. Divide batter between prepared pans and bake for about 20 minutes or until a toothpick comes out clean. Cool before transferring to a rack.
  7. To make frosting: Beat cream cheese until creamy, add powdered sugar and vanilla extract, then fold in whipped heavy cream until combined.
  8. Assemble the cake by layering one cake round with macerated strawberries and whipped cream, then repeat with the second round.
