  • 1 cup finely shredded zucchini
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for swirl)
  • 1 Tablespoon cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large mixing bowl, combine zucchini, eggs, oil, yogurt, and vanilla extract until well mixed.
  3. In another bowl, sift together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add dry ingredients to the wet mixture while stirring gently.
  4. In a small bowl, mix together additional sugar with cinnamon for the swirl.
  5. Pour half of the batter into the prepared pan; sprinkle with half of the cinnamon sugar mixture. Add remaining batter and top with remaining sugar mixture. Use a knife to create swirls in the batter.
  6. Bake for 60–65 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Cool in the pan for about 10–15 minutes before slicing.
