  • ½ red bell pepper (diced)
  • 1 small jalapeno (seeded and finely diced)
  • 1 cup long grain white rice
  • ½ teaspoon cumin
  • Kosher salt (to taste)
  • 8 ounces tomato sauce
  • 1 cup vegetable or chicken broth
  • Optional: finely chopped cilantro for garnish

Instructions

  1. Rinse the rice in a fine mesh sieve until water runs clear.
  2. Heat olive oil in a large saucepan over medium-high heat. Sauté diced onion, minced garlic, red bell pepper, and jalapeno for 1-2 minutes until onions are translucent.
  3. Add the washed rice to the pan and sauté until lightly toasted (about 2 minutes).
  4. Stir in cumin, salt, tomato sauce, and broth; mix well.
  5. Bring mixture to a boil, then cover and reduce heat to low. Simmer for about 15 minutes until rice is cooked through.
  6. Remove from heat and fluff the rice with a fork before serving.
