  • 1 cup farro, rinsed
  • 3 cups water
  • 1/2 teaspoon salt
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. In a medium saucepan, combine farro, water, and salt. Bring to a boil over high heat. Then reduce heat to low, cover, and simmer for 25 to 30 minutes until tender yet chewy. Drain any excess water from the farro and allow it to cool slightly.
  2. While the farro cooks, dice cucumbers, halve cherry tomatoes, finely dice red onion, pit and slice Kalamata olives, and chop parsley and mint. Combine all these prepared ingredients in a large mixing bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, minced garlic, Dijon mustard, salt, and black pepper until well combined.
  4. Add the cooked and cooled farro to the bowl with vegetables and herbs. Pour the dressing over this mixture. Toss gently to combine all ingredients evenly.
  5. Fold in crumbled feta cheese into the salad mixture. Taste your Mediterranean Farro Cucumber Feta and adjust seasoning if necessary. Serve chilled or at room temperature; optionally garnish with extra herbs or feta before serving.
