  • 4 medium carrots
  • 1 cup green lentils
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili flakes or harissa
  • Salt & pepper to taste
  • 1/4 cup toasted almonds
  • 1/4 cup fresh mint leaves

Instructions

  1. Rinse the green lentils under cold water and boil in a pot with enough water to cover for about 20–25 minutes until tender. Drain and set aside.
  2. Peel and grate or julienne the carrots into thin strips.
  3. In a skillet, heat olive oil over medium heat, sauté minced garlic until fragrant, then add cumin, paprika, and chili flakes; cook for another minute.
  4. In a mixing bowl, combine cooked lentils, grated carrots, sautéed aromatics, lemon juice, salt, and pepper. Toss gently to mix.
  5. Serve garnished with toasted almonds and fresh mint leaves.
