1 lb ground beef (or a mix of beef and turkey)
1/2 cup breadcrumbs
1 large egg
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme (optional)
1/3 cup ketchup (for glaze)
1 tablespoon brown sugar (for glaze)
1 teaspoon mustard (for glaze)
Instructions
Preheat the oven to 375°F (190°C) and grease a 12-cup muffin pan.
In a mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined.
Divide the mixture evenly among the muffin cups and press lightly to shape.
In a separate bowl, whisk together ketchup, brown sugar, and mustard; spoon over each meatloaf muffin.
Bake for 25–30 minutes until cooked through (internal temperature should reach 160°F/71°C). For a crispy top, broil on high for an additional 2 minutes.
