  • 1/2 pound ground turkey
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 2 cloves garlic (minced)
  • 1/2 small onion (minced)
  • 3 tablespoons Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 1 cup fresh spinach
  • 6 slices turkey slices
  • 6 slices provolone cheese or 1 cup mozzarella cheese

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a mixing bowl, combine ground beef, ground turkey, bread crumbs, egg, minced garlic, minced onion, salt, pepper, and Parmesan cheese; mix until well blended.
  3. Line a sheet pan with parchment paper and spread the meat mixture into a rectangle about 12 by 7 inches.
  4. Layer fresh spinach, turkey slices, and provolone cheese over the meat mixture.
  5. Roll the meat mixture tightly using the parchment paper to form a log shape.
  6. Bake in the preheated oven for about 25 minutes until cooked through and slightly browned.
  7. Allow resting briefly before slicing into pieces and serving.
