  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 cup plant-based cream
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, salt, and optional coffee powder.
  3. Add milk, vegetable oil, eggs, and vanilla extract to dry ingredients. Whisk until smooth.
  4. Gradually mix in hot water until batter is glossy and thin.
  5. Divide batter evenly among prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cakes cool completely on a wire rack before frosting.
  7. For frosting, beat softened butter until light and fluffy. Gradually add powdered sugar and cocoa powder while mixing continuously. Blend in plant-based cream and vanilla extract until creamy.
