  • 1/4 cup sugar
  • 2 large eggs (room temperature)
  • 1/2 cup milk (room temperature)
  • 1 tablespoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups grated zucchini
  • 1 cup add-ins (nuts, raisins, or chocolate chips)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine melted butter and sugar until well blended. Beat in eggs one at a time, then add milk and vanilla extract.
  3. In another bowl, sift together flour, baking soda, cinnamon, and salt.
  4. Gradually add dry ingredients to wet mixture and stir gently until just combined. Fold in grated zucchini and any chosen add-ins.
  5. Line your loaf pan with parchment paper and transfer the batter into it, smoothing out the top.
  6. Bake for 60 to 75 minutes or until a toothpick inserted comes out clean.
